Sally B. Nicholson, RDN, LDN


Sally Nicholson is a registered, licensed dietitian who has worked in healthcare, business and industry as a consultant, and director of multiple child nutrition programs. Most recently Sally’s specific areas of expertise have been in the field of child nutrition. She works with staff to improve areas of customer service, nutritional standards, recipe development, and developing quality, cost effective programs. In addition, she mentors students majoring in dietetics, food and nutrition and dietetic interns from two of South Carolina’s major universities.

Career highlights include South Carolina Outstanding Dietitian of the year for the Upstate in 2014, Director of the year for the South Carolina School Nutrition Association in 2015, and President for the South Carolina School Nutrition Association.

Her business accomplishments include taking school food service programs operating at annual deficits of $500K or more to performing as a profitable program within two years or less. She also promoted community outreach programs such as health fairs, summer feeding and legislation for child nutrition programs. She believes in teaching the staff how to operate cafeterias like restaurants in the schools and actively promotes student involvement through culinary competitions for various grade levels. Additionally, she works with vendors and engages members of the student population in taste testing activities.
Throughout her career Sally has always been known for her passion for living a healthy lifestyle and preparing and eating healthy foods.

She is a member of the Academy of Nutrition and Dietetics, School Nutrition Association, and the South Carolina School Nutrition Association.

Sally is passionate about life and living it to its fullest. She enjoys being with people, camping, swimming, paddle boarding, hiking, baking and gardening. She is currently working with Lexington School District One in Lexington, South Carolina as their food service director and registered dietitian.
